Healthy Caramel Slices

These are mainly dates, but cleverly disguised as caramel slices. Like the Pink Panther of desserts, only yummier.


  • 6 medjool dates (cut up into pieces with a scissors)
  • 1 cup cashew nuts, milled into flour
  • 4 medjool dates (soaked for 10 mins in hot water)
  • 2 heaping tsp cacao powder
  • 3 tbsp agave syrup (maple syrup would work too)


This recipe has 3 stages, it’s three fold, like when Chandler was in a box.


Mill the cashews into a fine flour. Add in the 6 dates, change the blade to the normal blending one if you’re also using a nutribullet, and blend together until they form a dough. Press this into a lined baking tray and put in the fridge.


Drain the soaked dates and add them to the blender cup. Add in 1/2 cup water (and a little cinnamon if that floats your boat) and blend until it’s a smooth caramel.

Take the base out of the fridge and spoon the caramel on top. Put in the freezer for an hour to set.

I had a shower to pass the time, maybe you could too.


In a little cup mix the cacao powder and agave together with a little spoon. This takes a few minutes to come together, but be patient cause it’s worth it. Pour on top of the caramel slice and put in the fridge overnight.


Slice them up and eat while watching all the Bruce Willis Friends episodes in a row in a darkened room.

Top Tip

You can set them in the freezer overnight too if you want them to be more solid.

I used a lined 19x19cm cake tin and only needed half of it.
