Oat & Sweet Potato Bars

I can’t believe it’s not butter! Well it’s not, it’s potato. BELIEVE.


  • 350g sweet potato (about two big ones)
  • 1 cup dates
  • 1 1/4 cup of oats
  • 1/2 tsp cinnamon
  • 1/2 cup coconut flour
  • 1/4 cup maple syrup


First peel, chop and then steam the potatoes for about 10 minutes until soft.

While that is happening line a small square tin with non stick baking paper.

When it’s done pour the soft steamed sweet potato into a blender and whizz it up with the dates nice and good (yes, nice AND good, both).

In a bowl mix the oats, cinnamon and coconut flour together. Then pour in the magical sweet potato and date puree. Whisper “oooooh” as you pour, it should automatically come out of your mouth. “Oooooooh.”

Add in the maple syrup and stir it up nice and good (yes, nice and good again. Can’t get enough!)

Pour the mixture into the tin and pop into the oven for 30 minutes, or until a knife comes out clean from the middle. Leave on a wire rack to cool.

Keep one wrapped in tin foil in your handbag/jeans pocket at all times for hunger emergencies. They happen to me every hour on the hour.

    In my opinion, I also think it would be good to put half of the oats in the blender.

    It would also be helpful to know what size dish you used since different depths dishes will have a different outcome in baking.
