Pea & Mint Hummus

Like Pea & Mint Soup, but spreadable.

Ingredients

  • 1/2 tin butterbeans
  • 1/4 cup liquid from butterbean tin
  • 2 cloves garlic
  • 1 cup cooked peas
  • handful fresh mint
  • juice of 1/2 lemon
  • 2 tbsp nutritional yeast
  • pinch of salt

Method

I used frozen peas so I boiled them for three minutes to de-frost.

Plop all the ingredients in a blender and blitz until smooth. Add more of the bean tin liquid if it isn’t blending easily.

Add more salt and lemon if it needs it.

Jump for joy at how lovely and green it is.

Eat.

Top Tip

To make more just up the quantities of beans, peas and mint and pig-out.
