Ever had a dream that peanut butter was cake, and that cake was shaped like balls? Stop dreaming, baby!
- 1/2 cup peanuts (I used roasted unsalted)
- 1/2 cup oats
- 3 medjool dates (use cheaper dates if that's all you can afford/find)
- 2 tbsp desiccated coconut (optional)
Use the miller blade on your blender and mill the peanuts into a lovely flour (it may be lovely but don’t eat it yet).
Change the blender blade to the regular one and add in the oats and dates. Mix until it all comes together in a dough. Add a tbsp of water and stir in.
Roll spoonfuls into balls with your hands, whatever size you fancy!
Pour some desiccated coconut onto a plate and roll the balls in this if you want them to look mad professional.
If you don’t have a milling blade then just throw all three ingredients into your blender and go for gold.
