When you want pizza and all you have are potatoes and a knife and some basil and other ingredients.
- 4 big potatoes
- 2 tbsp fajita spice (a little spice packet from a fajita kit, cause I'm lazy)
- 1/2 packet passata (about 250g)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1 tsp oregano
- 1 tbsp balsamic vinegar
- 1 tbsp nutritional yeast
- handful of fresh basil
First pre-heat oven to 200°c and get a lined baking tray ready.
Chop your potatoes length ways, put flat side down and chop into chips. Wet under a tap and place spaced out on the baking tray, still damp. Pour on the fajita spice generously and stick in the oven for 30 minutes.
To make the topping, heat the passata gently in a sauce pan, adding in the vinegar, garlic and onion powder, paprika and oregano as it heats. Let it simmer for five minutes then take off the heat.
Throwing everything together
After 30 minutes take out the chips (leave the oven on!) and pour them into a baking dish. Top them with the tomato sauce and sprinkle with the nutritional yeast.
Stick in the oven for the last 15 minutes until the sauce is bubbly and the chips are crispy.
Cover with fresh basil and serve to anyone who has never tasted pizza before.
