Potato Island Potato Broccoli Bake

It’s a layer bake, the savoury layer cake of dinner time.


  • 4 large potatoes or sweet potatoes peeled and chopped
  • 1 large head of broccoli or 1/2 bag frozen broccoli
  • 1/2 pint vegetable stock I used 1tbsp of boullion


First peel and chop up the potatoes. Pop them into a large pot of boiling water and simmer for 10 minutes, until really soft. Drain and then mash up with a potato masher until nice and smooth. (you can keep in lumps if you want, just know that you are a freak).

Stick the broccoli in a steamer or in boiling water and cook for 10 minutes, until soft and easy to chop.

Make 300ml of stock in a jug. Set aside. Heat up oven to 200°c.

Assemble! (like a Marvel character)

Pour the broccoli into a large baking tray and use a fork and knife to shred it into small pieces. Pour the stock in. Then spoon the mashed potato on top to cover all the broccoli. Stick in the oven for 20 minutes until hot through and the potato is crispy on top.

Serve with some nutritional yeast on top of the potato, and a bowler hat on top of your head.
