Have them for breakfast, lunch, dinner or use them as a ping pong ball (will fall apart when hit repeatedly).
- 3 medium potatoes peeled and chopped up
- 1 tbsp nutritional yeast
- 1/2 tsp onion powder optional
- 1/2 tsp garlic powder optional
- 1/2 tbsp tomato paste optional
- salt & pepper
The smaller you chop up the potatoes, the quicker they boil, so get them so teeny tiny that you can barely see them! (I’m exaggerating, just chop them up a couple of times. God I’m annoying.)
Pop them into a pot of boiling water and let it boil for ten minutes or until soft.
Drain, pour them back into the pot and start mashing them with a potato masher.
Add in any flavourings or spices you wish to. I usually go with nutritional yeast and dulse or salt.
When they are mashed up nice and smooooth, take a tablespoon of potato out of the pot. Put this in the palm of your hand and shape it into a ball, then gently pat it down into a thick pancake shape. Careful of the edges cause they can crack. Pop onto a non-stick tin foil covered grill rack.
Repeat with the rest of the potato.
Stick these under the grill until browned, about five minutes each side.
Take them out of the grill and say “Voila” out loud, then realise you are alone. And always will be.
Add in crazy things to make these potatoes zing, like turmeric, chilli powder, curry powder, shallots, paprika, lemon juice, jewellery (oh so fun and sparkly and crunchy!)
