Potato Island Roast Potato & Spinach Hash

I don’t really know what a hash is, but this all ends up in a frying pan so ‘hash’ just feels right, even if it is wrong.


  • 4 baking potatoes chopped up into quarters
  • 1 tbsp mixed herbs or a mix of dried basil & rosemary
  • 2 cups frozen spinach
  • 1 tbsp soy sauce
  • 2 tbsp nutritional yeast
  • cracked pepper to serve


First wash and chop up your potatoes, place them on a lined baking tray. Sprinkle them with the herbs and stick in a hot oven for 20 minutes until cooked through and a lil crispy. Set aside.

In a frying pan add about 1/4 of a cup of water and let this come to a boil. Add in the spinach, put a lid on and let this steam for five minutes.

Take the lid off and turn the heat up so all the water begins to cook off. Leave for two minutes.

Turn down the heat, add in the soy sauce and stir for a minute, then add the nutritional yeast and stir again.

Throw in the potatoes and shake it all together, or just stir it like a normal person, and throw into bowls to serve.

That was easy.
