Smoothie Pancakes with Chocolate Sauce

This recipe is egg free, dairy free, refined sugar free, and oil free. Gosh, what a smoothy.


  • 2 ripe bananas (dotty like Dalmatians)
  • ½ cup chopped dates
  • 1 cup flour (the flour is your choice!)
  • 1 tsp baking powder
  • 1 tbsp ground flax/linseed (mixed with 2tbsp of water)
  • 1 tsp cacao
  • 1 tbsp maple syrup (agave, date syrup or freedom syrup will do)


Flax egg

Add 1 tbsp of linseeds to the miller and turn it into flax (or just buy milled flax if you want to do things the easy way). Add in the 2tbsp of water, stir aggressively and let it sit for five minutes until it becomes a yeasty consistency (you’ll know what I mean when you make it. You’ll say “Oh, I see.” Out loud).


Mix the bananas, dates and flax egg with about ½ a cup of water in your blender until smooth. Leave it to the side and try to not eat it. Stop!

Mixing it up

Add the flour to a bowl and pour in the smoothie. Stir gently with a wooden spoon until a batter forms.

Cooking up a storm

Spoon the mixture on to a hot non-stick pancake pan (I got mine in Ikea for like £5 and it works like the fairy Godmother…of pancakes).

I find that half a ladle full makes one small, thick pancake. Wait until the batter is bubbling on one side before you flip to the other side.

Chocolate sauce

While you’re doing this get a kitchen helper or passing elf to mix together the cacao and syrup. This will only work if you stir really hard and fast, like combining oil and water, but delicious. Congrats, your elf has made a healthy chocolate sauce, Harry Potter would be proud!

Serve stacked high on a plate or on the bare chest of a muscular man/woman. The choice is yours.

Top Tip

Other toppings that would be as lovely as a pancake balanced on muscular man could be: nut butter, jam, maple syrup, apple sauce, lemon juice or coconut sugar.
